One idea to consider would be rather than doing the traditional bake sale, with everything marked with a price, would be to do it as a "bake sale by donation", i.e. as people come up to the table, tell them that it's just by donation...whatever they want to donate for the cause, anything from a quarter and up will be accepted. We made a lot more money doing it this way because people were happy to contribute to the cause and would usually hand over a dollar or two for something that we normally would have charged 50 or 75 cents on. Sure, there were a few tightwaddish people who would only pay like a buck or two for a loaf of bread, but most people were very generous, paying 20 bucks for a pie and so forth.
For the things like cookies and bars, have your bakers individually wrap them in saran wrap or small baggies so that they are presented as "ready to go"-- people seem more willing to pick them up and buy them as opposed to when they are all spread out on an open plate. Maybe it's a hygiene thing or maybe just that we are in the grab-and-go mentality, but we find that having everything pre-wrapped and ready to go really helps, too.
